1 small leek, cleaned and trimmed
1/4 medium onion, diced
1 1/2 tsp dried thyme, or 1 1/2 tbsp fresh thyme

1 1/2 cup fresh spinach, chopped
2 cup prepared lentils
1 bunch beets – peeled, diced to 1/2 inch and roasted
